Fluffy Homemade Bagels (Vegan)Print Recipe
- 2 tsp active dry yeast
- 1.5 tsp organic sugar
- 1 cup warm water
- 3 cups spelt flour (plus more for kneading)
- 1 tsp salt
- + optional toppings (I used Everything But The Bagel seasoning from Trader Joe's)
Microwave a 1/2 cup of water for 30 seconds until warm (not hot!) Pour the sugar and yeast into the water and let sit for 5 minutes or so to activate, then stir until dissolved.
Mix the flour and salt in a large mixing bowl and make a little dip in the center of the flour and pour the yeast and sugar mixture in the center along with the remaining warm water. Mix together until a dough forms.
Lightly flour a cutting board and knead the dough until it's smooth- 5 minutes or so.
Clean and rinse the mixing bowl and leave the inside wet. Then place the kneaded dough back into the mixing bowl and cover with a dish towel. Place the bowl in a warm spot for an hour, until the dough has doubled in size.
Once risen, punch the dough down and let rise again for 10 additional minutes.
Cover a baking sheet with parchment paper and divide the dough into 6 balls. Make holes in the middle of each ball and shape into bagels. Place on the baking sheet and cover with the damp dish towel for 10 minutes or so.
While you're waiting on the bagels to rise again, preheat your oven to 425 degrees and bring a pot of water to a boil. Once the water is boiling, turn down to medium-high heat and add the bagels to the water two at a time.
Let each bagel sit in the water for two minutes before flipping the bagels and cooking in the water for an additional two minutes. 4 minutes total.
After 4 minutes is up, place each bagel back on the baking sheet.
While they are still wet, add any seasonings to the top of each bagel.
Bake for 15 minutes or until golden brown.
Let cool for 10 minutes or so before serving!
