White Chocolate Cashew Butter CookiesPrint Recipe
- 16 ounces cashew butter (I made my own by blending roasted unsalted cashews)
- 1/2 cup coconut sugar
- 2 flax eggs
- 1/2 tsp baking soda
- Dash of salt
- 1/2 cup white chocolate chips (Pascha is my favorite vegan version)
Preheat the oven to 350 degrees.
Add all of the ingredients except chocolate chips to a mixing bowl and stir until combined, then fold in white chocolate chips.
Spoon the dough onto a parchment lined baking sheet and bake for 10 minutes.
Let cool completely on the pan before serving!
