White Chocolate Cashew Butter Cookies

Ingredients

  • 16 ounces cashew butter (I made my own by blending roasted unsalted cashews)
  • 1/2 cup coconut sugar
  • 2 flax eggs
  • 1/2 tsp baking soda
  • Dash of salt
  • 1/2 cup white chocolate chips (Pascha is my favorite vegan version)

Instructions

Preheat the oven to 350 degrees.

Add all of the ingredients except chocolate chips to a mixing bowl and stir until combined, then fold in white chocolate chips.

Spoon the dough onto a parchment lined baking sheet and bake for 10 minutes.

Let cool completely on the pan before serving!
