Baked Lemon Donuts

Vegan Baked Lemon Donuts

Serves: 5-6 Cooking Time: 10 minutes

Ingredients

  • 1 flax egg (1 tbsp ground flax mixed with 2.5 tbsp water. let sit for 15 minutes prior to using)
  • 1 cup spelt flour
  • 1/4 cup coconut sugar
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup almond milk
  • 2 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • 1 tsp lemon extract

Instructions

Preheat oven to 375 degrees.

Lightly grease a donut pan.

Make the flax "egg" and put aside.

Add all of the dry ingredients to a bowl, then add wet ingredients, with the flax egg last. Mix!

Pour the dough in the greased donut pan so each cavity is 2/3 full.

Bake in the oven for 10 minutes.

Let cool in the pan.

Notes

For the optional lemon coconut cream topping: I added a tsp of lemon extract to 1/4 cup of coconut whipped cream (SoDelicious is the brand I used), spoon the mixture on your donuts, add lemon zest, and that's it!
