Vegan Gingerbread CookiesPrint Recipe
- 1 flax egg (1 tbsp flax; 3 tbsp water)
- 2 cups spelt flour
- 1/2 cup coconut sugar
- 1/2 cup coconut oil, melted
- 1/4 cup almond butter
- 1/4 cup maple syrup
- 1/2 tsp salt
- 1/2 tsp baking soda
- 3 tsp ground ginger
- 2 tsp cinnamon
Make a flax egg first and let set up in the refrigerator for 15 minutes.
Preheat the oven to 300 degrees.
While it's setting up, add dry ingredients to a mixing bowl, followed by wet ingredients and mix.
Once dough is formed, roll between two sheets of parchment paper until the dough is 1/4 inch thick. (It's more difficult to cut into gingerbread shapes the thinner it is)
Use cookie cutters to make shapes.
Place on a parchment-lined baking pan and bake for 10 minutes.
Take out of the oven and let cool on the pan.
You can also make regular cookies out of this dough. Bake for an additional 5 minutes!
