Vegan French Toast

Vegan French Toast

Serves: 2-3 Cooking Time: 15 minutes

Ingredients

  • 1 tbsp ground chia seeds
  • 1 cup almond milk
  • 1 tsp vanilla extract
  • 1/4 tsp cinnamon (plus extra for topping)
  • 1 tsp maple syrup (plus extra for topping)
  • 5-6 slices of bread (I used sprouted spelt + flax bread)

Instructions

Add almond milk, chia seeds, vanilla, cinnamon, and maple syrup to a bowl, mix, and let sit for 15 minutes.

Once 15 minutes is up, heat a skillet over medium with a tbsp of coconut oil.

While skillet is heating, add first slice of bread to mixture and coat, then add to skillet.

Cook on both sides until they start getting golden and crispy.

Repeat with remaining pieces of bread.

Top finished french toast with extra cinnamon, maple syrup, and desired toppings.
