Strawberry Coconut Balls (Vegan + Gluten-Free)Print Recipe
- 4 pitted Medjool dates
- 1/2 cup raw almonds
- 1/2 cup unsweetened shredded coconut + 2 tbsp to roll balls in
- 4-5 fresh strawberries
- 1/2 tsp vanilla extract
- Pinch of sea salt
- 1 tsp beet powder for color (optional)
blend all ingredients in a high-speed blender until combined.
Scrape dough into a bowl and place in the refrigerator for an hour to firm up.
Once the dough is firm, roll into 1 inch balls before rolling in the leftover shredded coconut.
Once the balls are formed, place back in the refrigerator for a few hours.
These balls keep best if they're stored in the refrigerator.
