Strawberry Coconut Balls (Vegan + Gluten-Free)

Ingredients

  • 4 pitted Medjool dates
  • 1/2 cup raw almonds
  • 1/2 cup unsweetened shredded coconut + 2 tbsp to roll balls in
  • 4-5 fresh strawberries
  • 1/2 tsp vanilla extract
  • Pinch of sea salt
  • 1 tsp beet powder for color (optional)

Instructions

blend all ingredients in a high-speed blender until combined.

Scrape dough into a bowl and place in the refrigerator for an hour to firm up.

Once the dough is firm, roll into 1 inch balls before rolling in the leftover shredded coconut.

Once the balls are formed, place back in the refrigerator for a few hours.

Notes

These balls keep best if they're stored in the refrigerator.
