Peanut Butter + Jelly Banana Bread

Peanut Butter + Jelly Banana Bread (Vegan, Gluten-Free)

Serves: 10-12 slices Cooking Time: 45 minutes


  • 1.5 cups banana flour
  • 1/2 cup oat flour
  • 1/2 tsp baking powder
  • 3/4 tsp baking soda
  • 1/8 tsp salt
  • 3 ripe bananas
  • 2 tbsp. ground flax
  • 1/3 cup almond milk
  • 1/3 cup creamy peanut butter (plus more for swirling)
  • 3 tbsp strawberry jelly



Preheat your oven to 350 degrees and lightly grease a loaf pan. Set aside.


While the oven is preheating, add the dry ingredients (banana + oat flour, baking powder +soda, salt) to a mixing bowl and combine.


Then add all of the wet ingredients (banana, flax, almond milk, peanut butter) to a high-speed blender and mix.


Pour the wet ingredients into the bowl with the dry ingredients and combine.


Next spoon half of the mixture into the loaf pan.


Then spoon in 2 tbsp of the jelly and swirl into the mixture, then pour the rest of the batter into the pan.


Optional: before you place the bread in the oven, swirl the top with extra peanut butter and jelly.


Bake for 45 minutes or until a toothpick stuck in the middle comes out clean.
