Fiesta Stuffed Peppers

Fiesta Stuffed Peppers (Vegan)

Ingredients

  • 1 can black beans
  • 1 can fire roasted diced tomatoes
  • 1 cup cooked quinoa
  • 1/2 cup of your favorite salsa
  • 2 bell peppers, cut in half
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp chili powder

Instructions

Preheat the oven to 350 degrees.

Lightly grease a baking dish and set aside.

Add quinoa, black beans, tomatoes, salsa, and spices to a sauce pan and warm on medium.

While you're waiting, cut the peppers in half and place in the baking dish, then fill each half with the quinoa mixture.

Cover the baking dish with aluminum foil and bake for 10 minutes.

After 10 minutes, remove the aluminum foil and bake for an additional 20 minutes.
