Creamy Tomato Pasta (Vegan)Print Recipe
- 1/2 cup raw cashews
- 1/2 cup water
- 1/4 cup nutritional yeast
- 1 tsp sea salt
- 1 tsp garlic powder
- 1 tbsp olive oil
- 10-12 fresh cherry tomatoes
- 1/2 box spaghetti noodles
Cook spaghetti according to box directions.
While spaghetti is cooking, blend cashews, water, nutritional yeast, garlic, and sea salt. Set aside.
Warm a skillet on medium heat, then add olive oil and tomatoes. Cook until tender. (5-7 minutes)
Add the cashew mixture to the skillet and cook until warmed through.
Once warmed, add pasta to bowls and top with sauce.
Add more water to the sauce based on your preferred consistency.
