Cranberry Banana Muffins

Vegan Cranberry Banana Muffins

Ingredients

  • 4 ripe bananas
  • 1/3 cup coconut oil, melted
  • 1/3 cup almond milk
  • 1/2 cup palm sugar
  • 1 tsp vanilla extract
  • 1 cup spelt flour
  • 1 cup oat flour
  • 2 tbsp ground flax
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 3/4 tsp baking soda
  • 1 tbsp cinnamon
  • 1 cup fresh cranberries

Instructions

Preheat oven to 350 degrees.

Mix bananas, coconut oil, flax, almond milk, and vanilla extract together. (I used my blender.)

Add all dry ingredients to a mixing bowl, then add mixed wet ingredients.

Pour batter into muffin tin, filling each cup 2/3 full.

Bake for 20-25 minutes or until a toothpick comes out clean.
