Chilled Vegetable Pizza

When I was a kid my mom made what she called “veggie pizza” served chilled and made with a crescent roll crust, cream cheese, and fresh vegetables on top. Well, a few weeks ago I was craving one so I created this healthier vegan version with two ingredients + vegetables that I’m really excited to share with you!

Healthier Chilled Vegetable Pizza

Serves: 10 Cooking Time: 20 minutes

Ingredients

  • 1 Trader Joe's Cauliflower Pizza Crust
  • 1/2 container of Kitehill Vegan Chive Cream Cheese
  • 2 cups of raw vegetables, chopped (I used broccoli, carrots, onions, and sweet peppers)

Instructions

Cook cauliflower crust according to package instructions, then let cool.

While you're waiting on the crust, chop vegetables into bite size pieces and set aside.

Top cooled crust with a layer of the vegan cream cheese.

Sprinkle the chopped vegetables on top.

Allow to chill in the refrigerator for 30 minutes or so before serving.
